Apple pie

I sifted the flour mixed with cold butter, osanza, cut into cubes.

When the composition became sandy, I added the egg, yogurt, salt, vanilla and baking powder.

I kneaded until I got a homogeneous crust, I spread a sheet and folded it a few times. I covered it with a foil and left it in the fridge until I prepared the filling.

I cleaned the apples, took out their backs and cut them into cubes. I put them in a pan, I put sugar and orange juice on them, then semolina.

I put the pan on low heat and stirred until the semolina gave the consistency of the filling.

I added cinnamon. Now you can put raisins.

I let the filling cool.

I took the dough out of the fridge, divided it into two parts, then spread a very thin sheet. I divided the sheet into two rectangles. I put the filling and rolled.

If you succeed, you can only make two rolls, it will be more attractive than four, as I did.

I placed the rolls in a circle in a tray in which I put baking paper.

I put the pie in the oven at 200 degrees C for 30 minutes.

After it cooled, I powdered it with sugar.

I didn't have much patience and cut it while it was still warm.

You don't do that. You will get a much more successful section, not to say that it is not healthy to eat it hot.

Friday's recipe. Rotated with Christian apples, to Eminescu's liking (Romanian recipes to your taste)

On a day like this, in mid-January, we would like to have the power to become Eminescu's contemporaries, turning our heads. Let's live with him, breathe the same air and, why not, sit at the same table. I propose an exercise of imagination - to sit at the table with him, but not at Bolta Rece, in Ieși, but earlier, in the years of his childhood, those years about which we know so little and we can imagine so much.

We know that the houses of the Eminovici home, from Ipotești, had, in addition to the house with several rooms, barns, sheds, orchards and lime groves. But the child Mihai Eminovici - the poet Eminescu later - preferred to enter the poor houses of his friends, the children of the peasants from Ipotești, or to eat cheese with polenta at the sheepfold across the valley, or to roam the forests with two or three pretzels in hand and with a stack of books.

In Chernivtsi, he had at one time been the host of a Țirțec, who gave the children to eat corn boiled in milk, and when the teenager caught an apple, he ate it hurriedly and hungry.

What did Romanians eat during Eminescu's childhood? It was fashionable then a cookbook published in Bucharest in 1849 - so a year before his birth. Maria Maurer's cookbook has practical recipes and very precise details. And I think that if he hadn't been so hungry, the apples of Eminescu's childhood in Chernivtsi could have been put in a… Spinning with Christian apples. I also take the recipe from Maria Maurer's book (updating it, only, for a better preparation).

ROTATED PIE SHEET

I know that puff pastry is adored by all housewives. You can play with it indefinitely, inventing different shapes and combinations. And when you think about how easy and fast you can cook something tasty from puff pastry, starting with appetizers and ending with dessert!
Today I go out with the version of pie rolled with cheese.

puff pastry dough & # 8211 2 rectangular sheets
cow cheese & # 8211 350 gr
or & # 8211 1 pc.
milk & # 8211 1 tbsp
salt, sesame seeds

First we prepare the cheese for the pie. I used 250 gr of ricotta, 50 gr of mozzarella and 50 gr of curdled cottage cheese (more precisely & # 8211 quartirolo), but only cow's cheese can be used just as well. Put the cheese in a bowl, break an egg, salt and mix well.

Cut the puff pastry along the sheet, forming strips. Distribute the cheese and pinch the edges, as seen in the pictures. Wallpaper an oven tray with baking paper and arrange the puff pastry rolls in a spiral shape, leaving a small space (the puff pastry will increase when baking and will fill the empty space). Grease the pie with milk and press it with sesame, then put it in the preheated oven (200 degrees Celsius) for 20 minutes (the last 10 minutes we could reduce the temperature to 180 degrees).

Spinning with apples and cinnamon

knead a dough not too hard, cover it with a towel and put it in a warm place to rise for 1 hour.

Peel the apples, cut them, crush them with a blender (as I did) or cut them into small pieces.

On the work table we spread the dough in a thin layer with the rolling pin,

we arrange the apples on the whole surface. Sprinkle with sugar and cinnamon, and roll it.

Arrange the roll in a baking tray lined with baking paper and greased with a little oil, let it rise for another 15 minutes,

then grease with egg and put in the preheated oven at 180 degrees C for 20-25 minutes.

Rotated Apple and Walnut Pie

For this recipe, we need:

Ingredients

Method of preparation

  • We start by preparing the apple filling. They go through the grater with big eyes. Put them to harden in a pan over medium heat for about 15 minutes. Add the 5 tablespoons of sugar, cinnamon and continue to harden for another 5 minutes. Allow the obtained composition to cool.
  • We move on to the preparation of the dough. In a bowl put the egg and oil and beat for 1 minute. Add water and flour. The result is a soft dough that does not stick to the hands. We divide it into three equal parts. Sprinkle plenty of flour on the worktop and spread thin sheets on which we put apple and walnut. We roll them and cut each sheet in 2, to have 2 rolls.
  • The first roll is placed in the tray lined with baking paper, and then we come in its extension with the next one and so on until the end. Bake in the preheated oven at 200 degrees for about 30-40 minutes.

Pie rolled with apples and walnuts

A very fragrant, tender and delicious homemade pie.

Ingredient:

  • 700 g apples
  • 5 tablespoons sugar
  • 1 teaspoon cinnamon
  • nut
  • 350 g flour
  • 1 or
  • 100 ml oil
  • 80 ml water

How to prepare the pie rolled with apples and walnuts.

First we prepare the apple filling. We put the apples on a large-mesh grater. We put them in a pan and put them on medium heat until the juice left by them starts to drain, about 15 minutes. Add the 5 tablespoons of sugar and a cinnamon powder and leave on the fire for another 6-7 minutes. Let the apples cool and prepare the dough.

Put the oil and the egg in a bowl and beat them for 1 minute. Add water and then flour. The resulting dough is soft, oily, but non-sticky. Divide the dough into 3 equal parts.

We sprinkle plenty of flour on the worktop, we spread sheets as thin as possible, we sprinkled grated apple and walnut, then we cut each sheet in 2 vertically to give me 2 rolls. I rolled it and put it in the tray lined with baking paper. I came in the extension of the first roll with the next one and so on until the end.

Bake the preheated gold at 200 degrees for 30-35 minutes. At the end we sprinkle powdered sugar, or not, for a more rustic look.

Method of preparation

Wash the apples, peel them, remove the stalk and seeds and then pass them through a large grater. Squeeze well, by pressing between the palms, the grated apples and then mix them with sugar and vanilla sugar.
The resulting apple juice is drunk, in no case thrown away. It is very good and also healthy.
The mixture of grated apples / sugar is put in a saucepan to harden. Leave until all the juice left by them decreases.
Let it cool and add the cinnamon. Mix well with a wooden spoon.
Melt the butter, let it cool and then grease each sheet of pie separately. Overlap four sheets for each roll and grease each with a generous layer of filling, then roll.
The result was three rolls that I placed wrapped in a round tray lined with baking paper.
Grease with egg yolk and put in the preheated oven.
Bake for about 20 minutes and when it is nicely browned, take it out of the oven.

Caramel cream
Caramelize the sugar in a bowl with a thicker bottom. When the sugar has turned a golden color, add water. Leave it on the fire until all the sugar dissolves, then remove from the heat and let it cool.
Mix eggs well with the 2 tablespoons of sugar and then add flour and mix. Add the cold syrup and mix well.
Put the cream on low heat and mix until it thickens.
Set aside and let cool a little then add the butter cut into pieces and mix until smooth.
When the pie has cooled, take it out of the mold and spread caramel cream on top of it and sprinkle coarsely ground walnuts over it.
I assure you it is deliciously good!

Apple cake

Peeled apples are given through a large grater. Mix the dry ingredients flour, semolina, powder

Cheese croissants

In a bowl, mix the cheese with the soft margarine, add the egg, baking powder and flour and knead.

Spinning with apples

Spinning with apples it is an easy to prepare and very tasty dessert.
This time I prepared spun with apples in the fasting version, using a simple leavened dough available to anyone.
My family and I really like parjitele but also apple pies, so I always prepare a dessert for them to use apples.
I also recommend you some recipes with the best cakes in which I used apples and which were enjoyed with great pleasure.
Rustic apple tart, apple tart, apple cake, apple and cream cake, apple and biscuit cake

2 lg sugar
1/2 teaspoon salt
Filling
2kg mere
sugar to taste
ground cinnamon
vanilla sugar
2-3 tablespoons fine breadcrumbs
oil for greasing

First we prepare the apple filling as follows: wash the apples well and then grate them with the peel.(I never peel them & # 8230but you can do it if you don't like it) through the large grater.
Put the apples in a saucepan with sugar to taste and a little salt.
When the apples have started to soften, set them aside and add the breadcrumbs, which have the role of absorbing the juice left by the apples.

How to prepare pie sheets

Put sifted flour in a bowl and add salt over it.
Separately dissolve the yeast with the sugar, add about 100 ml of warm water and pour over the flour

Add the oil and knead well until well incorporated.
Let the dough rest for no more than 5-10 minutes, then portion the dough into about 5 pieces ..depending on how big you want your spins to come out.
Spread each piece in a thin sheet in a rectangular shape, grease with oil and place part of the filling on top.
Roll into a roll which you give the shape of a snail as in the picture.
Place the swirls on a tray lined with baking paper, grease with a little oil and sprinkle with caster sugar.
Put the tray in the hot oven for 25-30 minutes until the rolls are nicely browned.
Serve powdered with vanilla powdered sugar.
Note: If you do not want to make it spinning fasting, you can replace the oil with which I greased the sheets with butter,
and in the composition of the dough you can add 1-2 eggs and the water can be replaced with milk.
