De unde vin acești hribi cu smântână?

Unii le spun hribi, cuvânt luat de la vecinii slavi, alți mânătărci, și nu de la bulgari cum se zice, ci de la greci prin intermediul bulgarilor. Grecii numesc toate ciupercile manitaria, nu bulgarii! Sau și mai generic, boletus, din limba latină. Se găsesc în pădurile de conifere și foioase de la munte, așa cum numai în Bucovina există. Atâția fagi, încât habsburgii, din 1774, i-au și spus Țării de Sus a Moldovei Buchenland, Țara Fagilor, de la slavul buk.

Plini de vitamine și minerale, hribii nu doar că sunt gustoși, dar au un miros dulceag și un miez fraged, de parcă cer să fie tăiați iute în bucăți cât mai mici (dar nu foarte mici) și trași la tigaie cu puțin unt, cât să-și lase toate aromele. Dacă untul e dres și cu câțiva căței de usturoi, e și mai bine, dar, deși se spune că ciupercile merg de minune cu usturoiul, preferăm să fie doar o urmă fină și nu o explozie a gustului. Tocmai din acest motiv, de această dată nu mergem nici pe clasica ceapă tocată mărunt și rumenită pentru că dorim să simțim gustul de hribi în toată splendoarea lui.

Ca să se înmoaie, din când în când, peste prăjeala cu miros de pământ reavăn se mai adaugă apă. Separat, cremoasa smântână de Bucovina, își caută transformarea ideală, pentru a-și uni savoarea cu cea a hribilor. O găsește alături de câteva ouă proaspăt luate din cuibar și bine bătute și aerate, și-o legătură sărată de mărar, tocată mărunt.

Ca la un semn, hribii sar din tigaie în amestecul de smântână și ouă, spre o veșnică unire la căldura cuptorului. Nici nu trebuie mult să stea, că se sufocă. Sunt de ajuns 15 minute, ca să iasă un deliciu rumen. Turnați tot în farfurie, presărați pătrunjel tocat proaspăt, de un verde plin de energie, și completați cu un pic de mămăligă vârtoasă.
