Quinoa and lentil soup recipe of 06-02-2020
There quinoa and lentil soup it is a single dish gluten free perfect for the cold season, even if in reality if you want you can also serve it warm or cold and then eat it in all seasons. I wanted to make it very simple, with few ingredients, but if you prefer you can add carrots, cherry tomatoes, celery, bay leaves ... even a little bacon or fennel seeds in the sauce, if you like them;) Well, these days I'm struggling with several recipes to try, so I leave you to the recipe quinoa and lentil soup and we'll read later!
How to make quinoa and lentil soup
Clean the potatoes and onion, cut the first into cubes and chop the second.
Brown the onion in a saucepan with a little oil, then add the potatoes as well.
Cook briefly, then cover with the hot broth and start cooking: bring to a boil, then allow 20 minutes of cooking.
Meanwhile, rinse the quinoa under running water, put it in a saucepan with double its weight in water and cook for 10-12 minutes starting from the boil.
Also prepare the lentils (if you don't have them pre-cooked, simply boil them for about 40 minutes).
Then add the quinoa and lentils in the pot with the potatoes, stir, season with salt and continue cooking for another 10 minutes.
The quinoa and lentil soup is ready, serve it immediately.
